Using Tech to Be More Sustainable in the Kitchen

For example… Lemon Tartlets with Chocochino:

Lemon Tartlets with Chocochino

Lemon Tartlets Ingredients:

  • 250g flour
  • 350g butter
  • 255g icing sugar
  • Salt
  • 3 lemons
  • 6 eggs
  • 100g granulated sugar

Shortcrust Pastry Preparation:

Knead the sifted flour, 150g butter, 75g sugar, 1 egg yolk, the zest of a lemon, and a pinch of salt into a dough. (Warning - set the egg white aside for the meringue!) Grease the tartlet moulds and dust with flour. Roll out the shortcrust pastry thinly and line the moulds with it - chill for about 1 hour. Preheat the oven to 180 degrees Celsius and bake the tartlets for about 15 minutes until the pastry is golden brown and fragrant.

Lemon Curd Preparation:

In a pot, whisk together 4 eggs, 180g sugar, 180g lemon juice, and the zest of 2 lemons and thicken at low temperature. Once the mixture has the right consistency, let it cool slightly and stir in the butter cubes. Let the mixture cool for about 1 hour and then spread it on the finished tartlet bases.

Meringue Preparation:

Beat 2 egg whites and a pinch of salt, gradually adding the sugar. Just before the egg white is firm and glossy, add a splash of lemon juice. You should be able to form nice peaks. Fill the mixture into a piping bag with a nozzle and pipe as many dots as you like onto the tartlets. Finally, lightly caramelize the meringue with a Bunsen burner, or if (understandably) not at hand, you can put the tarts under a medium heat in the grill.

Chocochino Preparation:

  • 1 peeled kiwi
  • 1 banana
  • 1 green apple
  • 2 handfuls of spinach
  • 1 tbsp lemon juice
  • 250ml water or plant-based milk (adjust the amount of liquid depending on the desired consistency)

Smoothie Preparation:
